Fast-dissolving baker’s sugar

Castor sugar (also called caster sugar) is regular cane sugar milled into very fine crystals that dissolve much faster than granulated sugar. It’s ideal for light, smooth textures—think meringues, sponge cakes, mousses, and cold drinks.

An almost white or colourless crystal, dry crystalline powder, odourless, tastes sweet.
Identification
An orange precipitate is produced immediately.
Solubility
Very soluble in water; freely soluble in 70% ethanol; practically insoluble in ethanol.

Acidity or Alkalinity
The solution is colourless and <= 0.6 mL of 0.01 M NaOH is required to change the colour of the solution to pink.
